Larsen Consulting was founded by a team with deep roots in the foodservice industry. With over 25 years of experience spanning commercial kitchen design, equipment specification, sales, and project management — we understand this industry from the inside out.
We've worked with independent operators and national chains, represented leading manufacturers, and managed projects from first concept to final installation. That experience gives us a unique perspective on what food service professionals actually know — and how valuable that knowledge is outside the industry.
Club 86 is our answer to a problem we kept seeing: talented, battle-tested workers who couldn't get out of food service because nobody had translated their skills into language the rest of the world could understand. We're fixing that.

Mark Larsen brings over 25 years of hands-on experience in commercial kitchen design, equipment specification, and foodservice project management. He has worked with independent operators and national chains alike — representing leading manufacturers and managing projects from first concept to final installation.
That career gave him a front-row seat to a persistent problem: talented, battle-tested food service professionals who couldn't translate their skills into language the broader job market understood. Club 86 is his answer to that problem.
